Our Philosophy

We believe in leaving the land better than we found it. Allevamento Le Caldane is managed using 100% organic farming practices, working in absolute harmony with nature, free from synthetic chemicals. We are currently completing our official conversion period and will be fully certified organic by March 2027. This transition is a labor of love and a patient waiting game that ensures every thread of saffron, every stalk of lavender, every piece of fruit, every acorn and every blade of grass is as pure as the mountain air around us.

- The Red Gold of Saffron: When autumn arrives, our fields awaken in vibrant shades of purple. We harvest the delicate blossoms of Crocus sativus entirely by hand at the first light of dawn, preserving the purest essence of high-altitude saffron thread.
- Wild Mountain Lavender: Painting our dedicated land in deep blues and purples during the summer heat, our lavender fields hum with life. We cultivate this aromatic treasure to catch its calming fragrance, distilling the spirit of our rugged terrain into pure essential notes.

We are currently preparing our vaste pastures to breed and raise the authentic Maremma horse, the noble and fierce symbol of Tuscany. Renowned for their endurance, sharp intelligence, and profound bond with humans, these magnificent horses will find a protected home among our peaks—running free and becoming central to the daily, regenerative rhythm of our farm.
